4 Stars Great Little Pan 7 Years Later
I bought this pan 7 years ago back in ‘02 and it is a great value. Mine has a copper core, not aluminum and the heat transfer is excellent. I don’t think there is much difference between copper and aluminum cores since they are both excellent heat conductors, but I think copper has the edge. I find it does compare well to Calphalon One and All Clad but is not quite in the same league. The other two show more attention to detail and better craftsmanship and better customer service and do boast a Lifetime warranty which they do back up. With another item I found Cusinart’s customer service to be poor. My 2 ( 5.5 & 3.5 pans) saute pans have performed so well over the last 7 years that I don’t expect to replace them with anything else.
Very simply, this is a very nice, solid, heavy, good looking pan at a great price and compares very well to the other two. It is heavy, well made and conducts heat extremely efficently and you will use less gas/electric cooking with it. You will have to turn the heat down, which is a nice green feature. I find it cooks almost as well as the All Clads with the encapsulated copper and at a fraction of the price. I’ve been using this pan for over 7 years and I’ll bet I’ll still be using it 10 years from now. I have both the 5.5 and the 3.5 quart pans and they are both looking good after 7 years.
It is also versitle and you can use it for much more than mere sauteing. I’d recommend this pan for anyone looking for a large superior pan at a great price. A good product that performs excellently. If you have been cooking with inferior cookware you will immediately experiencee the difference. Bon Apetit.
5 Stars GREAT PAN, EXCELLENT VALUE
Had the pan for about 6 weeks. Still looks great. I really recommend Bar Keepers Friend to keep it looking new. Pan heats evenly and cooks very well. Use a little oil and TURN THE HEAT DOWN!! I think people who have problems are using too high of a heat setting.

5 Stars More useful than expected
I purchased this because it was highly rated by “Cooks Illustrated” and I haven’t been disappointed. It’s large deep sides are great, and it really holds the heat evenly and for a good period of time. I have not had to content with hot spots when simmering and once the pan is to temperature it holds the heat so browning is beautiful. The pan cleans-up well and the lid is tight and best of all the whole thing is oven proof. Great buy especially for the price.
