Everything is bigger in Texas and parties are no exception. This is the 2010 version of our annual Super Bowl party — Super Bowl 44, Indianapolis Colts vs. New Orleans Saints. This year we had over 221 pounds of meat including: 4 briskets, pulled pork, Beef Wellington, homemade meatballs, homemade cooked– to-order Cuban sandwiches, deer nuggets (deer tenderloin and bacon wrapped around a jalapeno), Sabrett “dirty water” natural casing hot dogs, home ground burgers, crab cakes, a chuck roast, bratwurst, and BBQ ribs. The sides included pierogies, mashed potatoes, candied sweet potatoes, NYC soft street pretzels, along with several others. As for dessert, there were over a dozen choices including cheesecakes, tiramisu, apple pies, brownies, and the Lombardi Trophy cake which was homemade by yours truly. Finally, there was an assortment of beverages to wash everything down. It took our team 3 days of prep before the game, along with 4 grills, 4 ovens, numerous cake pans, a side burner station, sandwich presses, a meat grinder, and a deli slicer to put all of this together.
