Fried eggplants with a hot tomato sauce – a simple, but refined snack for an easy festive table.
- 3 eggplants
- 4 large tomatoes
- ½ chili peppers
- 2 cloves of garlic
- 1 tsp. paprika
- pinch of ground cinnamon
- 1 tsp. sugar
- salt to taste

How to cook eggplants with spicy tomato sauce

Cut the tomatoes into pieces and send to the blender along with the chili, chopped until smooth. Transfer the mass into a small saucepan and bring to a boil, adding cinnamon, paprika, sugar and salt. Boil on low heat until the desired density, at the end add the chopped garlic and leave to cool completely.
Eggplants cut into small pieces, like potatoes for frying. Heat a frying pan with olive oil and fry the eggplant batches in batches until crusty on high heat. Ready eggplant salads and serve with prepared sauce and basil leaves.
